During this week we will add cilantro and anise to our herb gardens. It is probably time to move some of your plants to new pots, depending on the size pot you are working with. Crowding multiple herbs in a pot will give similar results to keeping them in small containers- they will not have enough space to grow. If your pot is large, add the cilantro to the basil and parsley. Some of you may remember that cilantro will not always make it through the summer. In hot weather it may bolt and go to seed. Farmers continue to bring us cilantro during the season because of continuous plantings. We may see the cut herb in our shares as time goes on, if not it is often available in the farm store. I suggest planting the anise in the garden, it is a perennial and it will flower this year so if you have some space in a sunny spot that would be the best idea. The anise will come back year after year and it will reseed in the garden as well. If you are limited to pots then move this plant into a larger container.

We had a question this week about freezing the produce in our shares. The season for asparagus will end before we know it and the leafy greens will not be abundant as the weather gets warmer. Before freezing the enzymes and bacteria need to be destroyed so blanching the vegetable for a short time is necessary. Stopping the cooking quickly is also important so have an ice bath ready before you blanch the produce. Keeping as much air out of your package in the freezer will help to maintain high quality. It is hard to believe that we are looking at the end of May already! I am hoping that all of you will have some time to get together with family and friends over the Memorial Day Weekend. Take a moment to honor those who have served our country.
