Week 12 July 11th – July 13th, 2017

Week 12 July 11th – July 13th, 2017

It has been a very busy week for me getting ready for Farm Camp. Week one will be in full swing as you pick up your shares this week. The young farmers may take a little time packing your share as it is a huge responsibility and certainly a major part of our schedule here at the farm each week. We still have some spaces available if you are thinking about sending your children to join in on all the fun.

We will continue to have summer squash in our shares. I have been following all the creative ideas on Facebook. One of my favorites this week was posted by Christine Bunero. She prepared lasagna that was layered with marinara, ricotta and parmesan and fresh mozzarella. Use your favorite lasagna recipe and Instead of noodles, use slices of zucchini. Gluten free, lower in carbohydrates.

It looked delicious.

Blueberries also made a hit on Facebook with a few breads and muffins. Blueberries are one of the most favored fruits for baking. There are so many recipes. Of course you can make or purchase a crust for a pie, however most recipes for blueberries use a form of quick bread as the dough making them a little simpler to prepare. The cobbler was the original dish, served often for breakfast, later, and of course now we serve these for dessert. It was made with any berry on hand.

The variations are many to include the slump, or grunt, or a buckle. They were often baked in a Dutch oven over a fire or later on stove top. The grunt is the sound the berries make while cooking. The slump or the buckle comes after baking the dish and the berries settle. Dump cakes have become popular because of their quick and easy preparation. I am including a recipe for that favorite this week.

I am of to camp, I hope all of you will have as much fun as me this week. Make sure you have the CSA breakfast marked on your calendars. Send me any ideas and recipes that you have. Until next week, enjoy the freshness.
