How to Store Green Beans
Unwashed green beans will keep in the refrigerator for 3-5 days in a sealed plastic bag.
If you are not ready to serve them blanch them and then freeze or refrigerate the beans to use in a recipe within a couple of days.
Green beans are an impressive source of vitamins A, C, and K, plus potassium and iron. They contain omega-3 fatty acids. Eating green beans may help boost energy levels, as well as cardiovascular and bone health.
Quick Green Bean Recipes:
* Blanch green beans in boiling salted water; cool to room temperature. Then:
* Toss with crème fraîche, minced shallots, lemon juice, and chopped chives.
* Cut on the diagonal. Sauté with butter and almonds until warmed through.
* Stir-fry briefly in canola oil with garlic, ginger, scallions, and soy sauce; sprinkle with toasted sesame seeds.
Arrange on a plate with tuna, olives, boiled potatoes, sliced tomatoes, hard-boiled eggs, and anchovies. Drizzle a vinaigrette over for a classic salade niçoise.
