These recipe ideas were sent to me by Sam Walmer our Farm Steward. He called them “recipes a la season.”
3 cups fresh apples of your choice, diced
2 cups granulated sugar OR substitute 1 cup local honey
1/4 cup cooking oil OR substitute 3/4 cup applesauce
3 farm eggs
1 teaspoon vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
Coat a 9 1/2-inch baking pan with cooking spray or oil. Heat oven to 350 degrees. In a large mixing bowl, combine sugar, oil (or substitutes), vanilla and eggs. In a separate mixing bowl, stir together flour, salt, vanilla, baking soda and cinnamon. Add dry ingredients to the large mixing bowl. Stir in apples. If batter if too stiff, mix in a little apple cider as needed. You may also add chopped nuts and/or raisins to your liking.
Pour batter into pan and bake for approximately 40 to 45 minutes. You will know when the cake is done once a testing stick or toothpick is inserted and comes out clean. Sprinkle top with powdered sugar. While cake is still warm, top with some Apple Butter or glaze with some jam or caramel topping. Servings: 9 to 12
