Lemon Basil Cream Sauce
Serve over pasta, grilled fish or chicken.Servings Size
2 tablespoons butter
2 cloves garlic, minced
1/2 c heavy cream
½ c half and half
1 cup chicken or vegetable broth
1/4 cup lemon juice, 1 T lemon zest
1 tablespoons cornstarch
1/4 teaspoon pepper
3 tablespoons chopped fresh basil
Melt butter in a large skillet over medium heat; add garlic and sauté 1 to 2 minutes. Add cream and chicken broth. Bring to a boil, and cook 8 minutes or until reduced by half. Whisk together lemon juice, lemon zest and cornstarch until smooth. Whisk lemon juice and 1/4 teaspoon pepper into butter mixture, and cook, stirring constantly for 2 minutes or until thickened.
Remove from heat. Add salt and pepper to taste. Stir in the basil when you are ready to serve.
