This week’s eating in season spotlight is on the amazing Superfood Kale. Kale is a dark, leafy green that can be eaten raw or cooked and hails from the cabbage family with relatives including broccoli, cauliflower and collards. This versatile vegetable has been around since Roman times, however, has really made it’s culinary debut in recent times, first seen as a popular addition to health drinks and smoothies and now very well known as a healthy addition to numerous year-round recipes. 

Kale is a cool-weather and frost-resistant crop making it available for up to three seasons here in New Jersey when other cruciferous options are less available. Kale is low in calories, is loaded with vitamins, minerals, omega 3’s, Anti-inflammatories, flavonoids, as well as powerful antioxidants making it the most nutrient dense food on the planet. 

Kale is delicious in a variety of cooking applications including; steamed, roasted, used raw in salads after being “massaged,” smoothies, stir fries, in soups and stews, mashed with potatoes and made into kale pesto.
Varieties of kale include curly, red, dinosaur, baby, purple and white flowering. Although curly is the most common type of kale, we grow a variety of kale here on our farm due to the demand, all using our sustainable farming methods.
