Cauliflower is a nutrient dense cruciferous vegetable related to broccoli, cabbage, kale, turnips, rutabagas, and Brussels sprouts. Belonging to the Cruciferae or Brassicaceae family,  cruciferous vegetables are aptly named because the flowers contain four petals that resemble a Greek cross.

Cauliflower is a powerhouse vegetable full of nutrition that is low in calories, high in fiber and a great, low-starch vegetable that doubles as a delicious carb substitute. High in antioxidants,  phytochemicals and a wide array of vitamins and minerals, cauliflower can easily provide a host of immune supporting benefits for our bodies especially needed for this time of year. Nutritionists say that one cup of raw cauliflower may provide you with 75% of your daily requirement of vitamin C!

Cauliflower is a favorite for us on our farm and you will see us harvesting this crop (weather permitting) typically into December. We farm 4 acres of cauliflower in shades of white, purple, orange and green and our farm production team says that cauliflower seems to pop out of nowhere going from tiny buds to seemingly full heads in no time! Our cauliflower crops, being a fall crop, can take a light frost. If heavier frosts are expected, our production team will utilize row cover in the fields to keep the crop protected. It’s a lot of work to cover and uncover 4 acres of cauliflower crops, but our team is happy to do this if it means having nutritious cauliflower in season for our guests! 

There are so many unique ways to eat cauliflower making it truly a versatile veggie. Nutritionists have crafted wonderful recipes blending  it into healthy smoothies, adding it as a healthy ingredient to oatmeal, pasta, mashed potatoes, soups, pizza crust and so much more. It can be riced and diced, mashed and roasted and just about anything in between and still taste great. Try it steamed, grilled then used in place of cheese sauces or made into flavorful dips. Cauliflower rice is a great way to add flavor and a serving of vegetables to your meal. Incorporating cauliflower in this manner is a great way to amp up nutrition and fiber in your meals while also eating in season.
