Believed to be native to America’s, summer squash are harvested when immature and the rind is still tender and edible. We farm 4 acres of squash growing six different varieties including; yellow round (AKA 8 ball) green round, yellow straight neck, Cousa, zucchini, and yellow zucchini. Squash is a nutritional power packed veggie high in vitamins, minerals and fiber. Not only good for you, they are also very versatile and can be incorporated into a variety of recipes to amp up nutritional value without impacting the flavor or taste of the dish. Our culinary specialist has curated a variety of recipes for you to enjoy summer squash while in season including summer squash ribbon skewers and grated summer squash and carrot salad.
Summer squash should be stored unwashed in a perforated plastic bag in the crisper drawer of your refrigerator for up to 5 days. You don’t need to peel summer squash before eating so you can really enjoy the health benefits of the skin. Now is a great time to think about preserving some squash while it is in abundance either by freezing or canning. It’s easy to slice the squash into rounds, blanch in boiling water for 2 minutes before plunging in ice water to stop the cooking process. Drain and pat dry and store in airtight containers for up to one year. Add this cooked squash to lasagna recipes, stir fries, soups, chilis and casserole dishes. You can also grate fresh squash and place in airtight containers and freeze for up to a year to use the grated squash in a variety of recipes.
We have to monitor our fields and could really pick them everyday as they grow very fast. It is said that summer squash can grow up to 2 inches in length every 24 hours!
