Kale has been in the popular limelight touted as being a trendy superfood. We believe kale’s popularity is here to stay due to its nutritional benefits, adaptability in recipes and for it being such an easy crop to grow.
Kale is a member of the cabbage family, a cruciferous vegetable like cabbage, broccoli, cauliflower, collard greens, bok choy and brussel sprouts. Kale is highly nutritious, rich in fiber and low in calories and contains essential vitamins and nutrients including; Calcium, Iron, Potassium, Vitamin A, C, & K along with beneficial Phytochemicals, Carotenoids & Flavonoids.
Health experts continually recommend incorporating more leafy greens into your diet and kale’s nutritional accomplishments and cooking versatility makes it easy and delicious to enjoy eating more greens.
There are several types of kale including common curly, lacinto, ornate, red russian, chinese, siberian, and redbor. Kale is considered a main crop on our farm and we grow several varieties for our community supported agriculture families as well as for sale at our farmers markets and in our farm store and farm stand. As kale is an easy to grow crop, we continually harvest the plant through late Winter on our farm here in New Jersey. A light frost has been said to make curly kale taste sweeter and we appreciate that we can harvest kale so late into the season to have a leafy green while still eating naturally with the seasons.
Kale’s prowess has reinvigorated a variety of traditional recipes by amping up the nutritional content and providing vibrant color backdrop to these dishes. Nutritionists, culinary specialists and chefs have been serving up kale in a multitude of reinvented ways including; baking & pureeing, eating it raw, sauteing & steaming, stuffing & sauces, and the most trendy new way is in juicing.
