Culinary Expert Jenn“Food For Thought” by Jennifer Borealo

This weekend I spent most of my time at the farm preparing and serving at our Jersey Fresh Food Festival. It is a true “farm to table” event and it really does show off the in season, fresh from the field produce that is in the market and of course the shares now. The Frittata from the breakfast made the menu, this time with zucchini, we prepared a 100 year old recipe called Gram Tyson Peach pudding that was an original recipe from the great grandmother of our Farm Steward Sam. Mini Mac Farm gave us some organic fresh ground beef so along with our tomatoes we prepared Bolognese sauce over pasta. Tomatoes were also served in a basil salad accompanied with smoked mozzarella. We made a home-made herb cheese and we had a guest nutrition student who brought along a recipe for corn and black bean salad. We also prepared cucumber, mint, and watermelon water. I could not do all of this myself, Martin from the Hen House, and CSA extraordinaire Veliko brought out their chef skills to help make everything go smoothly. Most of these recipes are on the website and I will post them on Facebook throughout the week.

It is time to “eat your water.” Sometimes it is difficult to drink the appropriate amount of water for my height and weight. At this time of year there are so many foods with a high water content that I incorporate into my diet I feel I can take a break. Fruits and vegetables are known to be high in water. This week alone we will have Watermelon, tomatoes, carrots, peaches, and eggplant. Throughout the seasons we can count on our produce bringing us hydration as well as so many other nutrients. In recent years I have been pleased to see watermelon come into a more accepted place. There are articles that talk about how it is actually better to hydrate with the fruit rather than the glass of water. It has also been said that nature brings this fruit to us when we need it, in the hot, humid weather of August.

This week I heard from CSA members Regina Garrell, Jill Ramacciotti, Virginia McDonnell. They all sent a recipe for eggplant. I will print one at a time. The recipe this week fills the 5 ingredient challenge as well. Michele Zanzonico sent her chicken thigh, red onion and peach recipe. It was the main course in an all peach dinner from (appetizer to dessert) she hosted last year. Everyone loved it so I think it may become an annual tradition at her house!
