Culinary Expert Jenn“Food For Thought” by Jennifer Borealo

Once again it is early Saturday morning and I am looking at a forecast that includes 80 degree temperatures. The difference this week is that soon after that there is a prediction of frost overnight on Monday. That means that we will have peppers in our shares probably for the last time since they have to be picked to save them. The production team has plenty of work cut out for them.

This week you’re getting purple potatoes. They will all have purple skins however when they are peeled some will be purple on the inside and some will look golden. Purple Potatoes have a slightly nutty flavor. Last winter we prepared garlic mashed potatoes with this variety for our Healthy Eating Open House. That would be my first suggestion for preparation. They are great roasted and they can be used in a salad. I will look forward to all of your creative posts when you use them.

Here comes an apple you will rarely hear about. Mutsu apples are a cross between the Golden Delicious and the Indo apples. They were first grown in Japan and named after the Mutsu region. These apples are also known for their size, often quite a bit larger than most others! They are great for sauce, eating out of hand and have been noticed as good for pies. The second apple is the Suncrisp that also has the Golden Delicious as one of the parents.

Locally developed at Rutgers and released in the 1990s. This apple has red flush over a green background with a little yellowing. Use these apples for cooking and serving fresh.

The fall squash this week is the butternut. Not one of the prettiest of the fall varieties but one of the most favored. This squash has great flavor and texture. When roasted I find that I rarely have to add any extra sugar. It is easy to peel and of course it can be used in most of the winter squash recipes.

I am noticing lots of beans and greens for some really delicious meals on Facebook. Apples for desserts look absolutely delicious. One of my favorites is an apple pecan cake. Michele Zanzonico posted an apple cake the other day. Jennifer Criso, Cathie Hall and Ashleigh White all posted pies this week. It seems as though everyone is enjoying the apples.
