Culinary Expert Jenn“Food For Thought” by Jennifer Borealo

Slowly but surely we make the transition into fall. I am writing to you on the last weekend of summer and the heat and humidity makes it really feel like it. The cool nights have already given leaves on the trees the beautiful fall glow that we all love here in New Jersey. The cool weather will bring back some leafy greens and will sweeten the starch in many of the fruits and vegetables.

This week we have a long time favored apple in the shares along with a new favorite from the last few years. Of course I will have to let all of you decide which your favorite is. I am sure that many of you will let your thoughts be known on Facebook so I will pay attention. A little tart and crisp like no other. They have held their own in popularity through the years. They are best for eating out of hand and they do make great apple sauce. They are not the most recommended apple for cooking or baking. The parent apples are the Macintosh, and the Jersey Black. Long called the “Macoon” you can call them correctly by saying that Macoun rhymes with noun and you have the correct pronunciation. And then there is the newly favored Honeycrisp. Again sweet and tart and oh so juicy. It is not a surprise that the Macoun has been named as one of the parents to the Honeycrisp along with the Honeygold. With apples in full season we are pressing cider all the time so we will reap the benefits this week with apple cider in the shares for the first time in a while. I am including a recipe posted by Cathie Hall for Apple Cider Cupcakes. I could not resist, they look fabulous!

We will have Yukon Gold Potatoes in the shares this week. They are well known for their buttery rich flavor and great texture. Many recipes are for mashing however now they are used more often in recipes where they are boiled until fork tender like a parsley potato. Ann Buggy posted a recipe for green beans and potatoes on Facebook, using the Yukon Gold that has always been a favorite of mine. Be sure to take a look.

As I picked up my share this past week there were leafy greens that I did not remember on the list. They resembled collards, not on the list, right? It was the kohlrabi, there have been times when this is in the share when we have so many other greens and I never get to prepare them. Keep in mind that the kohlrabi greens like the beet, turnip, and radish greens are edible and can be added to soups and stews and stir fried or just sautéed with a little garlic.
