Culinary Expert Jenn“Food For Thought” by Jennifer Borealo

It is the week that we all return to school and most family vacations are over so we are back in the workplace as well. The share this week will help you to pack some colorful, healthful, fresh, raw, and delicious lunches. In Ultimate shares you will find lunchbox peppers. They are the most vibrant yellow and red and oh so sweet. They can be served as a raw snack, as pepper poppers, pickled, roasted and preserved, added to tacos and more. I found that the pictures and recipes from the Food Network in an article called “10 ways to use Sweet Mini Peppers” to be an inspiration. Take a look, for those of you with children “the Sea Monster” could be a lot of fun! All of the peppers these days are becoming quite colorful so sweet as well.

Classic Ultimate shares are going to have edamame, or young and tender soybeans. They are not always available fresh, they are often purchased frozen, so this will be a treat. If you are going to store them for a couple of days it should be in a perforated bag in the refrigerator. To prepare them, steam or boil the pods 5-6 minutes. Drain and plunge into cold water, drain again and sprinkle with salt. Place the pods between your lips, squeezing the pods with your fingers will allow the peas to pop out directly into your mouth. They have been a part of Asian cuisine for many years. They are a delicious snack. They can replace beans in pasta recipes, prepare hummus or use the edamame in stir-fry recipes. Of course edamame is considered a superfood. High in fiber, omega 3, vitamins and minerals, it is the vegetable with the more protein and all of the amino acids. Keep in mind, you are only going to eat the beans, the pods could cause digestive distress so they should not be eaten.

Again we have the blessing of late summer and fall fruits, again ready for packing lunch. Our shares will once again have peaches, plums, pears, melons, and this week gala apples. Gala apples are have become an American favorite. Galas are a sweet apple with Red and Golden Delicious in its family tree. The Gala apple is best for eating out of hand and for adding to salads. They are a good apple for sauce but they are not a recommended apple for baking.

This week we had our third “Fresh Discoveries” class. We had some fun cooking with tomatoes, peppers,
and eggplant. The next class is on September 27th at 5:30. If you are local and the time is convenient
