Culinary Expert Jenn“Food For Thought” by Jennifer Borealo

As we pick up our share this week we are looking at Labor Day Weekend. It is the unofficial end of summer and to many the end of summer produce. The customer who stopped every day for corn and tomatoes will now go into fall mode and look in a different direction. We know better. It continues to be the heart of the season and I would say it is mostly about the tomato. They are in the height of their season and those who love to can and preserve are in the know and ordering daily.

We all know that summer continues but the fall is creeping in. Pears will be in the shares for the first time this week. Pears are picked as mature fruit however they are not fully ripe. They will need to sit out for a few days before eating. I had a few “just picked” pears in a basket on my counter for 3 days last week. When I cut one on Friday it was juicy, flavorful, and so sweet. So be patient and keep an eye on them.

We had Lodi apples in the summer and Ultimate shares will have another early fall apple. The Zestar. This is a bright red apple with a little green or yellow coloring. These apples are tart with a little sweetness, some call it a brown sugar undertone. They are known to be juicy. Zestar apples are great for eating out of hand, for the best flavor serve them at room temperature. They can be kept one or two days on the counter, however apples will keep better when refrigerated. Zestar apples are good for cooking and some say that they are good for baking and pies as well.

It is evident that fruit will abound once again in our shares. Muskmelon, New Jersey cantaloupe, will be in all the shares. They should be ripe with a yellow skin under the webbing. Leaving them on the counter for 1 day is fine, longer storage is in the refrigerator. Be sure to wash the melon before cutting to be sure you do not pull any bacteria into the flesh of the fruit as you cut.

CSA member Ann Buggy posted a five ingredient recipe for Sautéed corn on Facebook this week. Featuring corn off the cob. It just takes a few minutes with a sharp knife and if you have an old angel- food cake pan the cob will fit into the center and the kernels will neatly fall into the pan. Give it a try!
