Black Bean Stuffed Peppers

1 ¼ c water
1-3oz package low fat cream cheese
2 cups cooked brown rice
2 cups of chopped fresh spinach
1 10 oz. tomatoes with green chili peppers or substitute fresh from the share.
15 oz. can black beans, rinsed and drained
2 T dried minced onion
1 t ground cumin
1 t oregano
3 large bell peppers
½ cup shredded cheddar cheese

Preheat oven to 350 degrees F (175 degrees C). Pour water into a 9×13-inch baking dish.

Stir cream cheese in a bowl until smooth. Fold brown rice, spinach, diced tomatoes with green chills, black beans, minced onion, cumin, and oregano into the cream cheese until evenly mixed.

Halve bell peppers lengthwise. Remove and discard stem, seeds, and membranes.

Fill each pepper half with about 3/4 cup of rice mixture; arrange into baking dish. Sprinkle cheese evenly over stuffed pepper halves.






Peach, Plum, and Apricot Crisp

4 1/2 cups sliced peaches
2 cups sliced plums
2 cups sliced apricots
3/4 cup granulated sugar
3 tablespoons all-purpose flour
1/4 teaspoon grated whole nutmeg
Cooking spray
1 cup old-fashioned rolled oats
1/2 cup packed brown sugar
3.4 ounces all-purpose flour (about 3/4 cup)
1/2 teaspoon salt
1/4 cup butter, melted
4 cups vanilla low-fat ice cream

– Combine first 6 ingredients in a large bowl; let stand 15 minutes.
– Preheat oven to 400°.
–  Spoon fruit mixture into a 13 x 9-inch glass or ceramic baking dish coated with cooking spray. Bake at 400° for 35 minutes or until bubbly.
– Combine oats and next 3 ingredients (through salt) in a bowl. Drizzle with butter, stirring until crumbly. Sprinkle oat mixture over fruit.
– Bake an additional 15 minutes or until topping is lightly browned and fruit is bubbly. Serve warm with ice cream.




Eggplant Parmesan Heroes

This family friendly recipe comes to us from Kim DeMaria.  The eggplant is dipped into the
marinara sauce instead of egg and it is baked instead of fried.

1 medium eggplant, 1 lb.
1 cup marinara sauce
1 c seasoned croutons crushed
½ cup shredded parmesan
4 hero or hoagie buns, split
Basil leaves, optional

Preheat oven to 400 degrees F. Lightly coat a baking sheet with nonstick cooking spray. Peel eggplant, if desired; cut eggplant into 1/4-inch-thick slices.

Place marinara sauce in a shallow dish. In a second shallow dish combine crushed croutons and half the cheese. Dip eggplant in marinara and then in crouton mixture; press to coat. Place eggplant on prepared baking sheet. Lightly coat with cooking spray. Bake for 15 minutes or until breading is browned and eggplant is tender. Remove from oven.

On another baking sheet toast buns for 2 minutes or until lightly toasted. Meanwhile, transfer remaining marinara to a small microwave-safe bowl; heat in microwave for 30 seconds. Place eggplant on toasted bun bottoms; top with warm marinara, remaining cheese, and bun tops. If desired, sprinkle with basil leaves.

Pork Medallions with Magic Green Sauce

1 small jar capers
1 cup packed chopped fresh cilantro (1 bunch)
1/4 cup extra-virgin olive oil, divided
1 tablespoon water
2 bunches green onions, divided
4 (4-ounce) boneless center-cut loin pork chops
3/8 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper
16 heirloom cherry tomatoes (red and yellow), halved

Spoon 1 tablespoon caper brine and 2 tablespoons drained capers into the bowl of a mini food processor. Add cilantro, 3 tablespoons oil, and 1 tablespoon water.

Chop green onions to measure 3 tablespoons. Add 3 tablespoons green onions to cilantro mixture; process until smooth.

Cut remaining onions diagonally into 2-inch pieces. Cut 8 pieces lengthwise into slivers; set aside.

Heat a large skillet over medium-high heat. Sprinkle pork with 1/4 teaspoon salt and pepper. Add remaining 1 tablespoon oil to pan; swirl to coat. Add pork and 2-inch onion pieces; cover and cook 4 minutes. Turn pork over. Add tomatoes; cook 2 minutes. Sprinkle with remaining 1/8 teaspoon salt.

Arrange pork mixture on a platter. Drizzle with sauce; sprinkle with slivered onions.
