Don’t throw away your scallion roots when you can upcycle them instead and enjoy fresh green onions year round!
Our culinary & education specialist, Miss Jenn, has put together simple instructions on how to regrow scallions from roots that would have been discarded, continue reading to learn more!
Scallions (aka green onions or spring onions are harvested and sold with a root. This root is typically trimmed and discarded. Why not regrow your own green onions instead? Place the roots in a shallow bowl and add enough water to cover the roots while leaving the top edges above water.
Set in a sunny spot on your windowsill or in a garden window. Keep moist and you will find that the shoots will emerge in a few days. Remember to change the water once per week. After the shoots have grown approx 4-5 inches long you may repot into any container. Snip the shoots to enjoy fresh snipped green onions in recipes or as a garnish.
