Is a Spanish recipe, so it is not too spicy. It is a cold soup, almost like a salad in a cup. Allow to chill so that the vegetables will be crisp and, the flavors will develop.
6 ripe peeled and chopped tomatoes
1 purple onion finely chopped
1 cucumber peeled cut in 1/2lengthwise and seeded, chopped
1 green or red bell pepper, cored and seeded, chopped
2 stalks of celery chopped
1-2 T minced fresh parsley
2 T chopped fresh chives
1 clove of garlic minced
¼ cup red wine vinegar
2 T fresh squeezed lemon
4 cups tomato juice
1/4 cup good olive oil
3- 6 drops of Tabasco sauce or to taste
1-2 t Worcestershire sauce
Chop the vegetables and mix together in a bowl, set aside.
Blend together the last 6 ingredients and stir together well.
Add the vegetables to the liquid. Cover and allow to chill for 4-6 hours or overnight.
