2 lbs. Bok Choy, trimmed and sliced lengthwise
3-– 4 Tablespoons olive oil
6- 8 scallions, sliced
4 cloves garlic, finely chopped
3 tablespoons soy sauce
1/2 teaspoon crushed red pepper flakes or to taste
1 pound shrimp, peeled and deveined
Bring 2 inches of water to boil in a large pot over high heat. Stir in the Bok Choy and boil for 1-2 minute 2, then drain. In a frying pan heat 2 T the olive oil for 2-3. Stir fry the garlic and onion minutes. They should soften and slightly brown. Remove from the pan and set aside. Pour in additional oil if needed. Stir fry the shrimp in batches. They should be pink and just about cooked through in 2 minutes, remove and stir in the Bok Choy, soy sauce and red pepper. Add in the garlic scallions and shrimp. Heat through and serve over rice.
