Makes about 12 medium biscuits
2 cups all-purpose flour
1 1/2 teaspoons baking powder
½ t baking soda
1/2 teaspoon salt
6 tablespoons butter
½ c cheddar cheese, grated
White and tender green part of 6-8 thin scallions, sliced thin
1/3 cup milk
1/3 cup buttermilk
Extra milk or melted butter
Heat the oven to 400°F and line a baking sheet with parchment paper.
In a medium bowl combine flour, baking powder, baking soda, and salt, whisk to combine. Cut the butter into small cubes and add it to the flour, With a pastry blender cut the butter into the dry ingredients until the mixture resembles crumbs. Add the cheddar cheese and scallion, and stir to distribute. Add the milk and buttermilk stir to combine. ( Add extra milk 1 T at a time if needed)
Flour a cutting board lightly. Remove the dough from the bowl, put it on your floured surface, and pat it into a rough square about 8 inches across. Gently knead the dough just one or two turns. If needed dust your work surface with flour again, if needed, and pat the dough to a thickness 3/4 inch. Using a biscuit cutter cut circles from the dough as circles should be cut very close together. Place the biscuits onto the parchment paper lined sheet gently press the scraps together. Cut a few more biscuits. Brush the tops of the biscuits with milk or melted butter, if desired, and bake at 400°F for 10 minutes and lower the heat to 375 for 8-10 more minutes or until lightly browned, about 20 minutes.
Serve warm. Biscuits are a quick bread. Touching the dough as little as possible will ensure that the biscuits are tender and flaky. They are best served the day that they are prepared.
